The Acipenser baeri, or Siberian smooth-bellied sturgeon, is found in the large rivers of Siberia and can reach a weight of up to 200 kg. This species is very active in ponds and swims both on the bottom and on the surface, making it easy to tame.
Siberian sturgeon thrives particularly well in our climate and is therefore very suitable for extensive pond breeding. It also performs optimally in fish farming.
The Siberian sturgeon is a gracefully streamlined fish and shares many similarities with the sturlur sturgeon. It has a long, pointed snout with a white spot on the tip of its nose.
Our Acipenser Baerii caviar comes from a selection process by professional laboratories. They select the largest and finest grains from Baerii of different origins, raised in large ponds fed by river water.
These sturgeons circulate freely, which gives a caviar low in fat and rich in calcium and potassium due to the quality of the water.
With a rather firm texture, this dark-colored caviar bursts with power on the palate. Lightly salted, it has a very mild taste and a delicious nutty flavor.
